A unique cheese made with a fine white mould covering. This Johannes is intended for people who like an oozing Aussie Camembert style cheese. The cheese is not coated with Camembert mould. Instead, the fine layer of white mould is a type of Geotrichum. The resulting flavour has some nuttiness, ammonia, garlic and sulphur notes. We feel that Camembert mould on goat cheese can be too sharp.
The paste will get supple with oozing near the edge.
The only Camembert-style cheese available in Peter’s childhood in Sydney came in a can, probably from Denmark. Peter used to eat this cheese with his father. So a cheese in this style needed to be made in memory of those times.
