Mount Cotton is the big hill to the east from us at Burbank.  The Mount Cotton develops the strongest taste of this range of cheeses.

The Mount Cotton takes a little longer to develop its more pronounced flavour and takes a while to ripen through the paste.  It doesn’t have the smoothness and politeness of the Bûche. For those looking for a bolder and stronger tasting goat cheese, this is the one for you!
